I think it's important to cut the cloth to measure. Deconflict the unconference events so you don't have more than one running a month. Keep the local OpenCoffees lively by spreading them out to no more frequently than once a fortnight. I do barcamp's because I enjoy it and any incidental things because the passion carries me there:-). Not everyone will get turned on by being involved at organisation level - however as you say everyone can be an attendee and most can be speakers - at barcamps and in other places. Everyone has something they can share - whether it be experience, skill set or sectoral knowledge.
