Lifehacker mentions iTube as a windows app that does that stuff I mentioned above- download and re-encode from youtube in one go.

On the mac, tools like Podner and TubeSock will download the video from YouTube and convert it to your choice (.avi, .mov, mp4) in one click. This makes saving videos for iTunes/Video iPods very simple.

Vixy.net is my favourite one, it allows you to download a video as an avi, mov, or mp4, or (handily for me) to take the audio as an mp3. It doesn’t always work perfectly, but it’s the handiest.

And dont forget, you can always upload the flv directly back to the server if you so wish. At least with google video you can anyway. Hnady for keeping an embarrassing copy of all those electorial promise videos online for years to come
